Slow Cooker Garlic Parmesan Spaghetti Squash

Spaghetti squash simmers into a creamy garlic parmesan side that feels rich while staying light.

Ingredients

  • Small spaghetti squash
  • 3 tbsp unsalted butter
  • 1 1/2 cloves garlic (minced)
  • 1/8 cup heavy cream
  • 1/4 cup freshly grated parmesan
  • Fresh parsley (chopped)
  • Salt and pepper to taste

Directions

  1. Pierce your spaghetti squash with a sharp knife 6-8 times around. Place it in your slow cooker and cook for 4 hours on high or 8 hours on low.
  2. Once the squash is tender, remove it and allow it to cool.
  3. Slice lengthwise and scoop out seeds and use a fork to scoop and create long strands.
  4. Return the squash to the slow cooker and turn it on low. Add cream, garlic and butter. Stir occasionally until thick.
  5. Add parmesan cheese, salt and pepper to taste.
  6. Serve immediately.
