Chinese Pie with Ground Beef and Potatoes
Layers of seasoned beef, tender potatoes and sweet corn make this a hearty stick-to-your-ribs casserole.
Ingredients
- 1 lb lean ground beef
- 1 cup onion (chopped)
- 1/2 cup chopped bell pepper
- 1 packet gravy mix
- 2 cans sliced potatoes (drained)
- 2 tbsp unsalted butter (melted)
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1 can cream-style corn
- 1 can whole kernel corn (drained)
Directions
- Cook the ground beef in a large skillet for about 3 minutes. Add the onion and bell pepper and continue cooking until the onion is translucent and the beef is no longer pink.
- Transfer the ground beef mixture to the slow cooker and sprinkle with gravy mix.
- In a bowl, toss the drained and sliced potatoes with your butter, salt and black pepper. Arrange the potatoes over the beef and gravy layer.
- Combine the cream-style corn with the whole kernel corn in a bowl and mix well. Pour this over the potatoes and sprinkle with salt and pepper.
- Cover the slow cooker and cook on low for 2 hours. If you are using raw potatoes, allow an extra 2-3 hours, or cook until the potatoes are fork-tender.
