Minute Microwave Cheesecake

This quick microwave cheesecake is creamy, tangy and perfect when you want dessert fast.

Ingredients

  • 2 oz cream cheese (softened)
  • 2 tbsp sour cream
  • 1 egg
  • 1/2 tsp lemon juice
  • 1/4 tsp vanilla
  • 2-4 tsp sugar replacement

Directions

  1. Mix all ingredients in a microwave-safe bowl.
  2. Cook on high for 90 seconds, stirring every 30 seconds to incorporate all ingredients.
  3. Refrigerate until firm or ready to serve.
  4. Optional: Top with whipped cream, fresh fruit and nuts.
